Sorbitan Tristearate - Product Description

Sorbitan tristearate (abbr. STS) is a synthetic ester made by the reaction of sorbitol with stearic acid under controlled conditions with three molecules of stearic acid vs one molecule of sorbitol. It acts as a non-ionic surfactant. It can also be used as a dispersing agent in emulsifiers, stabilizers, and food, and in aerosol sprays. As a food additive, STS has the E number E492. Its main functions are to retard fat bloom in chocolates and prevent cloudy appearance in cooking oils.
